Sick Day Vitamin C Boosting Soup Recipe

We are currently going through sick days back to back. During the winters, Its so freezing cold outside that we barely get any direct sunlight except through the windows. Back in India, children are exposed to early morning sun rays everyday to build immunity. Although its possible here in the summers , its not ideal in the winters because of the cool breeze. When the flu hits, its the most uncomfortable and tiring time of the year and for us moms, as you know, there are no sick days!

Winter time always calls for warms soups with maybe a side of salad and some tortilla chips or pita chips in my case, a favorite in this house. Soups are filling and healthy, they can be also customized to soothe a sore throat or instantly comfort your stomach when you’re under the weather. And for me, the plus is that they are so darn easy to make! The Lemon Coriander Vitamin C boosting soup is the perfect combo of taste and and health packed into one! While there are so many versions of this soup, I’d like to share my recipe for sick day in particular. The base of it being citrus-y , Its most likely to fit in the menu on any day of any season. And if you are having a sick day as well, this soup will definitely bring back your taste buds , so do try it out.

Ingredients : Serves 4 

  • Juice of 1 Lemon
  • 1 Carrot cut into very thin round slices
  • 1 inch of ginger sliced into thin rounds
  • Coriander/Cilantro roughly chopped 1/2 cup
  • 2 Garlic Pods Roughly chopped
  • 1/2 Onion Chopped thin (optional)
  • vegetable stock or water (I used water in this particular recipe but if you want to use veggie stock, You can make it in advance by cooking Cabbage, mushroom, Peas, Corn and Beans)
  • Cumin Powder
  • Turmeric Powder
  • Salt
  • 1 Teaspoon corn flour (optional)

Directions : 

Heat a heavy bottomed pan. In my case I used a steel pressure pan with a glass lid which i often use to make rasam for Raaga. Add no more than 1 or 1 and 1/2 table spoons of oil. Add the chopped garlic. When it slightly turns golden, add all the other ingredients except the cilantro/Coriander and the lemon juice. Add salt to taste, a pinch of turmeric powder and a 1/4 teaspoon of cumin powder.

Let this simmer for several minutes. Meanwhile, take a small cup of warm water and mix 1 teaspoon of cornflour in it. make sure its smooth with no lumps. After the soup simmers for some time, add the corn flour mixture to it slowly and stir. Then add coriander and the lemon juice to it. Let it simmer for 2 more minutes. Then serve it hot in a bowl with a slice of lemon and some freshly ground pepper.
